Delheim Chenin Blanc Wild Ferment, Stellenbosch
From the slopes of Simonsberg Mountain near Stellenbosch, Delheim is a family-owned 375-hectare winery. After the grapes are picked and crushed, the juice is left to ferment for two days, and then it is put into barrels. Natural yeast spontaneously starts the fermentation process (no commercial yeast is added). After fermentation, the wine is left on its lees for 9 months and then bottled after a light filtration. After a year maturing in the bottle, it is released for sale, resulting in fragrances of stone fruits and orange peel, supported by subtle notes of honeysuckle. Vibrant fruit and a lasting finish on the palate. Impressive. 13.5%
